Jump to Recipe

Bright, creamy, and perfectly portioned, these mini lemon cheesecakes are the kind of dessert that feels both elegant and effortless. With a buttery graham cracker crust and a smooth lemon-infused filling, they strike the perfect balance between rich and refreshing.

These individual cheesecakes are inspired by simple European café desserts — small, unfussy and meant to be enjoyed as a sweet little treat. They’re easy to make, bake quickly, and are ideal for entertaining, spring gatherings, or whenever you want a dessert that looks special without a lot of effort.

WHY YOU’LL LOVE THIS RECIPE

  • Perfectly portioned — no slicing required
  • Bright lemon flavor without being overly sweet
  • Make-ahead friendly and easy to store
  • Elegant but approachable — great for entertaining

These mini cheesecakes are proof that simple desserts can still feel refined.

THE FLAVOR INSPIRATION

Lemon desserts have a long history in European baking, especially in smaller, individual portions meant to be enjoyed alongside coffee or tea. These mini lemon cheesecakes take inspiration from that tradition — simple ingredients, balanced flavors, and a focus on texture rather than excess sweetness.

The lemon adds brightness without overpowering the creamy filling, making this a dessert that feels light and refreshing rather than heavy. I recommend tasting the filling before you pour them into the cups to make sure they are the right amount of sweet and tart for you. If you find that you need a little extra tart, add one teaspoon of fresh lemon juice at a time until you reach that perfect tang. If you want a little extra sweet, add a little more sugar until you reach that perfect balalance.

INGREDIENT NOTES

A few small details make a big difference here:

  • Cream cheese: Full-fat works best for a smooth, creamy texture
  • Fresh lemon zest + juice: Brings brightness and balance
  • Graham cracker crust: Buttery and crisp, with just enough crunch

Because the ingredient list is short, quality really matters.

TIPS FOR PERFECT MINI CHEESECAKES

  • Bring the cream cheese to room temperature for a smooth batter
    • A little trick I’ve learned being a food photographer is that when you’re butter or cream cheese are lumpy due to it being a smidge too cold, use a hair dryer or heat gun around the bottom of the bowl while mixing. Do this until everything smooths out.
  • Don’t overmix once the egg is added — this keeps the texture creamy
  • Bake just until the centers are slightly set with a gentle jiggle
  • Chill before serving for the best flavor and texture

Mini cheesecakes continue to set as they cool, so resist overbaking.

MAKE-AHEAD & STORAGE

These mini lemon cheesecakes can be made a day in advance, making them perfect for entertaining.

  • Store covered in the refrigerator for up to 3 days
  • Serve chilled, or let sit at room temperature for 5–10 minutes

They’re even better the next day once the flavors have had time to settle.

CAN YOU FREEZE MINI CHEESECAKES?

Yes — mini lemon cheesecakes freeze beautifully.

To freeze:

  • Let cheesecakes cool completely
  • Wrap each one tightly in plastic wrap
  • Store in an airtight container

They’ll keep well for up to 1 month. Thaw overnight in the refrigerator before serving.

Freezing doesn’t compromise texture, which makes these an excellent make-ahead dessert.

SERVING IDEAS

Keep them simple, or dress them up slightly:

  • Lightly sweetened whipped cream
  • Extra lemon zest
  • A dusting of powdered sugar
  • Fresh berries on the side

Their small size makes them ideal for dessert tables or plated dinners.
